I must be the only person in North America who never had green bean casserole. In my family, holidays always seemed to be about the glazed carrots and candied yams. Well, anyway. One of my favorite flavor combinations is that of green beans, bacon and tomatoes. With that in mind here’s the recipe I put together.
1 lb green beans
1 white onion cut in half vertically,
sliced thin and separated into rings
1 28oz can stewed tomatoes
1/4 cup ham, finely chopped
1/2 tsp tarragon
1 bay leaf
1 can black beans, drained and rinsed
3 tbsp bread crumbs
1/4 cup grated parmesan cheese
Heat oven to 350F.
In a 9 X 9 inch casserole dish combine beans, onion, tomatoes, ham, seasonings and black beans. Stir until thoroughly combined. In a bowl combine bread crumbs and parmesan cheese and spread evenly over the casserole.
Bake the casserole, covered 15 minutes. Remove lid and bake another 5 minutes or until topping turns slightly golden brown.
To make this more of a vegetarian dish omit the ham and add 1/2 cup chopped walnutes.
