The tangy taste of lily buds or golden needles combined with the sweet taste of rice wine gives this chicken dish a unique Chinese flavour.
2 chicken thighs – cut to bite-size pieces
1/2 cup golden needles or lily buds – washed and soaked 30 minutes
1/2 cup cloud ears or tree ear fungi (using 1/4 cup dried – washed & soaked, 30 minutes till open up)
5 Chinese black mushrooms – stems discarded, washed & soaked 30 minutes or more till soft
1/2 tsp salt
1 tsp Chinese rice wine or dry sherry
1 tsp cornstarch
Dash of sesame oil.
Dash of white pepper
1/4 tsp sugar
1/4 tsp soy sauce
1/2 tsp salt
1/2 tsp sugar
1/2 tsp soy sauce
3 Tbsp water
Step1. Marinate chicken pieces with Ingredients A for 20 minutes.
Step2. Marinate black mushrooms with Ingredients B for 20 minutes.
Step3. Cut away hard parts from cloud ears.
Step4. Break away hard ends from lily buds & tie each in a simple knot.
Step5. Mix chicken pieces with lily buds, cloud ears and black mushrooms with Ingredients C.
Step6. Steam over medium heat for 12 – 15 minutes.
Step7. If desired, drizzle 1/2 tsp of fried shallot oil over chicken. Ready to serve.
