Creative dishes using spinach comes in a variety of mixes. One of my favorites is a mix between a multi-vegetable pasta or lasagna. Spinach is a super food filled with nutrients and antioxidants, which is beneficial to your body.
I have always loved eating spinach in salads, as a side, or in a meal. I would consider spinach as a mainstay dish. Of course, most people are not attracted at the fact of eating another green leafy vegetable, so this recipe allows it to be a little more attractive.
You will need the following ingredients:
1 can of spinach, drained or 25-30 shredded fresh leaves of spinach
1 box of lasagna noodles, uncooked
4 cloves of garlic, diced
3 stalks of celery, diced
2 carrots, peeled and peeled
1 container of firm tofu
1 large sweet red onion, sliced
1 bottle of low fat Alfredo white sauce
2 cups of water
2 tbsp black pepper
2 tbsp dill weed
3 shreds of tarragon (do not put too much)
2 tbsp Italian seasoning mixed herbs
2 tbsp of honey
1 cup of shredded low fat cheese (sharp cheddar or monterey jack)
First, mix the spinach, garlic, celery, peeled carrots, tofu (crushed), black pepper, dill weed, tarragon, Italian seasoning, and honey together in a large bowl. Set aside.
Second, mix the Alfredo sauce and water in a separate bowl. Optional, you can add more spices to create more zest in the dish, such as white pepper or red crushed pepper.
Preheat your oven 350 degrees bake.
Third, start layering your lasagna. First layer will be the uncooked lasagna noodles, and then spoon on the spinach mixture over the noodles. Next layer add another row of uncooked lasagna noodles, spoon Alfredo sauce mixture over the noodles. Repeat layering until you reach the top of the pan.
Make sure to make the sauce soupy, because the extra sauce and mixture will cook the uncooked noodles perfectly.
Place pan in the oven and set your timer for 35 minutes bake time. When the timer stops, place the sliced onions on the top of the lasagna and bake for an additional 10 minutes. Do not forget to set your timer for 10 minutes. When the 10 minutes are done, sprinkle the cheese over the top of the onions and lasagna and leave for an additional 5-10 minutes in the oven. This will ensure the cheese melts perfectly over the lasagna without burning or crisping.
Remove and enjoy a healthy and delicious meal!
