Some of the best dessert recipes I have made, especially cakes, were created by adding different flavored colas in place of water. This same technique holds true with this flavorful recipe for pulled pork. While many pulled pork recipes are made with traditional barbeque sauce, the homemade sauce in this recipe will be a welcomed change.
Root Beer Pulled Pork Sandwiches
1 boneless pork loin roast, trimmed of excess fat (approximately 3 lbs.)
1 Tbsp olive oil
1 medium onion, chopped
2 can root beer (3 cups)
1 bottle chili sauce (12 oz)
1/2 tsp garlic powder
1 Tbsp brown sugar
Salt and pepper to taste
12 Hamburger buns or rolls
*In a large skillet, heat oil. Sear the roast on all sides.
*Place the roast in a crock pot with salt, pepper, onion and one cup of the root beer. Cover, cook on low for 8 hours.
*In a saucepan, heat the remaining two cups of root beer, the chili sauce, salt, garlic powder and brown sugar on medium heat until bubbly. Stir occasionally until sauce has a glossy texture, approximately 8 minutes.
*Remove pork from the crock pot and discard the liquid. Shred the pork with a fork. Add the shredded pork back to the crock pot and pour the sauce on the pulled pork, mixing well.
*Spoon pulled pork onto the buns or rolls and enjoy!
