Recipes Pumpkin Raisin Bars

Pumpkin raisin bars are a quick and easy delicious treat. For added flavor try the frosting recipe I have included for the pumpkin bars.



15 ounces canned pumpkin
2 cups all purpose flour
4 eggs
2 cups brown sugar
1 cup oil
1/2 cup walnuts
1/2 cup raisins
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/3 cup butter (softened)
3 ounces packaged cream cheese (softened)
2 cups powdered sugar
1 tablespoon milk
1 teaspoon vanilla

Preheat oven to 350 degrees .

Beat the eggs and add in sugar and canned pumpkin. Sift the flour, salt, baking powder and baking soda. Fold the dry ingredients into the wet mixture and add in the nutmeg, cinnamon and cloves. Beat all the ingredients with an electric mixer at low speed for 3 minutes and then for another 2 minutes on medium speed. Stir In the raisins and walnuts with a spoon and mix well.

Bake the pumpkin raisin bars batter for 25-30 minutes or until light brown. Cool the bars in the baking dish for 30 minutes and then cool on a wire rack for 60 minutes.

Mix the frosting ingredients in a large bowl and blend well. Cut the bars into pieces and frost when completely cool.

Refrigerate for a minimum of 60 minutes before serving, to allow the frosting to set.
