Pumpkin fudge is delicious any time of the year but a real treat for the holidays and it makes a wonderful gift. Simply place it in a decorative tin and put a bow on it.
1 cup of milk
3 cups of sugar
1/2 cup of pumpkin
1/2 cup of butter
3 Tablespoons corn syrup
1 Teaspoon pumpkin pie spice
1/4 Teaspoon salt
1+ 1/2 Teaspoon vanilla extract
1/2 cup chopped nuts (optional)
In a large 3 quart saucepan combine milk, pumpkin, corn syrup and sugar and bring to a boil on high heat. Stir occasionally. Reduce the heat to medium and without stirring continue to boil pumpkin mixture. Keep boiling until a small amount of the pumpkin mixture forms a soft ball in cold water. Remove from the stove and add the nuts, butter, spice and vanilla extract. Let the mixture cool for 30 minutes or until lukewarm. Beat the pumpkin mixture until it becomes very thick and becomes less glossy. Immediately pour into a greased 8″ square pan. Cut when firm and serve.
