Need to make something quick but have not gone grocery shopping and the cupboards are bare? Here is an easy dinner with only a few things needed and which are a staple in most households.
6 – 7 potatoes, peeled and grated
1 large onion, grated
6 heaping tablespoons of flour
salt and pepper to taste
Mix potato and onion in bowl.
Add eggs and mix.
Add flour and mix.
Pour enough oil in large frying pan to cover bottom and heat to hot.
Spoon 2 to 3 tablespoons of batter into frying pan to make pancakes.
Brown both sides and remove.
Place cooked pancakes on clean paper towel to absorb any remaining oil.
These beauties are wonderful to serve with a side of applesauce for dipping.
