Pork rinds w/grits
I grew up in the South. We had plenty of hogs and hog products. My daddy made cracklings, which is another name for pork rinds. Since this article falls under recipes, I guess I will have to give you a recipe.
1 cup of medium grind pork rinds
2 cups grits
Prepare grits as you normally would (boil). Towards the end of the cook time (boiling), add 1/2 cup of pork rinds. Using a ladle, stir pork rinds into grits until they are submerged. Lower heat and let simmer for 3 to 4 minutes. In a sauce pot, heat up the remaining pork rinds and serve on top of grits, same as you would bacon or sausage.
