Recipes Nutritious Red Rice

In America, red rice is considered to be an exotic rice. It has a nutty flavor, soft texture and beautiful red color. It doesn’t become sticky when cooked like other rice. It is a perfect choice for meals that center around the rice dish. It works well for salads and goes well with steamed vegetables, fish and light meats.

Red Rice and Feta Cheese Salad
To prepare rice:
1 cup red rice
2 cups water
1 tsp. of salt

Boil rice in salted water for about 40 minutes. Turn off heat and allow rice to sit covered 15 minutes.

To prepare dressing:
1 clove garlic, crushed
1 level teaspoon ground mustard seed
2 tablespoons apple cider vinegar
2 tablespoons extra virgin olive oil
2 shallots, peeled and finely chopped
2 ounces Romaine lettuce, finely shredded
3 green onions, finely chopped, including the green ends
7 ounces Feta cheese

Crush garlic and mash with one-half teaspoon salt. When this is a puree, add the mustard and work it in. Add the vinegar and some freshly ground pepper. Use a whisk and blend in the oil. Taste to check seasonings. Add the shallots, lettuce and green onions. Combine the rice with the dressing. Before serving sprinkle cheese on top.
