Low fat sugar cookies are easy to make just substitute your regular sugar with equal or a sugar substitute of your choice as the recipe below will show you how to do.
5 cups all purpose flour
1 cups sugar substitute
1 1/2 cup butter (softened)
2 teaspoons baking powder
1 teaspoon vanilla
1/2 teaspoon salt
Cream the butter and sugar substitute in a medium sized bowl. Cream until the butter mixture is smooth. Beat in the eggs and vanilla extract and stir in the flour, salt and baking powder. Cover and freeze the sugar cookie dough overnight.
Preheat oven for 10 minutes at 400 degrees. Roll out the dough on a floured surface and roll till the dough is 1/2 thick. Cut out the cookies with a cookie cutter and place the cookies 2 inches apart from each other on a greased cookie dish. Bake for 8-10 minutes.
To decorate your cookies make a low fat cream cheese frosting.
8 ounce low fat cream cheese
3 tablespoons of skim milk
Mix until firm and add food coloring to decorate your cookies or serve without the frosting.
