There is something about French onion soup that soothes the body and mind on a cold wintery day. This recipe is quick and simple to make.
6 cups of chicken stock (or make your own see recipe below)
3 large onions (sliced)
2 Tablespoons of extra virgin olive oil
1/4 cup of cooking sherry
1 packet of French onion soup mix (for added flavor)
Homemade Chicken Stock
8 cups of water
2 Tablespoons of chicken base or 6 bouillon cubes
* Bring to a rapid boil stirring continuously for 10 minutes. You will be left with about 6 cups of stock.
In a large frying pan heat the 2 tablespoons of olive oil then saute the sliced onions.
In a large sauce pan or stock pan pour in your chicken stock, cooking sherry, sauted onions and the French onion packet cook on medium heat for 15 minutes then simmer for another 15 minutes.
Serve with a fresh green salad and warm bread. Serves 4
