If you like tropical, you’re going to love this dish. It’s simple, but delicious, and a must try desert that will melt in your mouth, and leave you asking for more. Like most tropical fruit, it has a tangy zest, but when included in this dish, its flavor is not as robust, but it does taste wonderful. I would like to offer two variations to tantalize your taste buds.
3 eggs beaten
1 cup sugar
1 (20 oz) can crushed pineapple with juice
4 cups soft bread cubes
teaspoon vanilla extract
Preheat oven to 375 degrees F (190 degrees C)
In a mixing bowl, cream together butter and sugar
Add eggs, milk, pineapple and juice, bread cubes, and vanilla. Mix well
Bake on a 2 quart casserole dish for 45 minutes
If that one did not catch your eye, try this one on for size. It is also easy to make, and tastes wonderful.
1 (20 oz) can crushed pineapple, drained
1 cup white sugar
2 tablespoons cornstarch
cup cold water
1 tablespoon vanilla extract
1 tablespoon butter
1 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C)
Grease a 9×9 inch baking dish
In a mixing bowl, mix together the pineapple, sugar, cornstarch, water, eggs and vanilla.
Pour the mixture into the prepared baking dish.
Dot the mixture with the butter and sprinkle with cinnamon
Bake in a preheated oven for one hour.
