Potluck Casserole Pasta Enchalada

This recipe for an Enchilada Casserole was a huge hit at a Cinco De Mayo potluck I attended a couple of years ago, and it’s great if you’re a fan of enchiladas! My mother-in-law showed me a great twist to traditional enchiladas and I’ve been using the recipe ever since!

What you’ll need:

1 lb ground beef

1 small can of your favorite red enchilada sauce*

1 pkg small corn tortillas

1/2 small onion (chopped very finely)

1 8 oz pkg finely grated fiesta blend cheese

*If you prefer to make your own homemade enchilada sauce that’s fine too!

1.Pre-heat oven to 350 degrees.

2. Chop onion into small bits and put into large skillet over medium heat.

3. Add ground beef to skillet and brown. (Onions should cook down while beef browns).

4. Once beef is fully cooked, add red sauce. Turn heat low and let simmer a few minutes.

5. Spray a 9X13 casserole dish with non-stick cooking spray.

6. Line the bottom until it is completely covered with corn tortillas

7. Add a layer of the ground beef mixture followed by a layer of cheese.

8. Repeat steps 5 and 6 until casserole dish is full.

9. Place casserole into pre-heated oven for 10-12 minutes, or until cheese is completely melted.

If you prefer chicken enchiladas but would like to use the same idea, you can sub 3 large boneless, skinless chicken breasts for the ground beef, green chili sauce for the red, and brown rice for the onion, and flour tortillas instead of corn!

Another great potluck caserole dish is one I like to call Pizza Pasta.

What you’ll need:

1 lb ground beef

1/2 7oz pkg pepperonis

1 can Hunts Traditional pasta sauce*

4 cups garden rotini noodles

1 8 oz pkg shredded mozzarella cheese

*Or any pasta sauce you prefer.

1.Pre-heat oven to 350 degrees.

2. Brown ground beef.

3. Chop up pepperonis, add to fully cooked ground beef and let cook about 5 minutes.

4. Add pasta sauce to ground beef and pepperonis.

5. Boil rotini noodles until tender.

6. Combine noodles and meat sauce.

7. Place mixture into casserole dish and top with mozzarella cheese.

8. Place caserole in oven for about 15 minutes or until cheese has melted.

These two casseroles aren’t time consuming and a great addition to any potluck! Ether one is sure to be a success!
