400g/14 ounces abalone or oyster mushrooms
100g/3.5 ounces meat (pork or chicken) – optional (omit for vegetarian dish)
3 cloves garlic – minced
3 thin slices of ginger (if using chicken)
2 Tbsp oyster sauce
½ tsp sugar
½ tsp soy sauce
dash of pepper
1.Wash mushrooms and squeeze out excess water between palms. Shred roughly – a big one to 3 or 4 pcs , smaller ones to 2 or 3.
2.Heat up wok or pan on low medium fire and put in garlic (and ginger). Fry a few seconds till aromatic.
3.Increase to medium fire and add in meat (if using). Fry till cooked then add in mushrooms. Stir-fry for a while. Add oyster sauce and the other seasoning ingredients and fry for another minute or two till quite dry. Ready to serve.
