When we have Meat Loaf my Husband is the “Chef”. Although the shelves in my kitchen house a cookbook collection of more than six-hundred, my children have always voted their Dad’s meat loaf the best. As adults, their favortism has not waned. When word gets out Dad is making meat loaf, they mysteriously show up for dinner.
In a large bowl combine the following ingredients:
2 lbs ground chuck
1/4 – 1/2 cup of onions diced
1/4 cup of diced green peppers
2 large eggs
1 cup of crushed corn flakes
A dash of Worchestershire sauce (I think this is his real secret ingredient)
1/4 tsp. of garlic powder
Salt and pepper
He mixes it all by hand, making sure all the ingredients are completed blended.
Shape into a loaf and place in a cake pan or a bread pan.
Bake at 350 degree for about 1 hours.
His famous meat loaf is served with a side of mashed potatoes, green beans and bread and butter. I admit begrudgingly it is the best meat loaf I have tasted. I happily step out of the kitchen when ever he gets the urge to make it.
