Ice cream or ice cream with two cookies? I do not know about you but I would go for the second. And that is after all, what you get when you go for an ice cream sandwich, the creamy tasty ice cream with a special bonus.
As a child I often craved those delightful sandwiches, however, my favorites were those with two chocolate chip cookies filled with vanilla ice cream and semi-sweet chocolate chips all around. However, Carvel’s flying saucers easily ranked as my second favorites.
Now I make my own ice cream sandwiches, but I will say up front that I cheat by buying the chocolate chip cookies. With not too much time on hand, I must admit at times I have resorted to short cuts in my kitchen. In any case, this treat should save you a trip to your favorite ice cream shop, should there be a summer thunderstorm or an occasional shortage of change and you do not feel like cracking the piggy bank.
You will need:
4 Mrs Fields soft baked large chocolate chip cookies (or white chocolate /macademia)
4 scoops of favorite vanill a ice cream (I like Haagen Daz)
1 cup semi sweet chocolate chips
The procedure is easy as can be imagined. Have the ice cream out for a bit to soften so it is easily spreadable on the cookies. Spread on cookie and make a sandwich, roll the sandwich into chocolate chips and freeze to settle a couple of hours.
Once nice and settled, serve. The kids will love them and so will you!
