I first discovered Garlic Cream in a fabulous restaurant in Las Vegas. I did not know for sure how to make it so I began experimenting. I now have what I call Garlic Cream, a sauce that works well with almost any roasted meat. I love it smeared over a nice thick piece of Prime Rib or a nice Grilled T-Bone, but it is comfortable slathered on Elk steak, hamburgers or mixed into a meatloaf.
This is simple to make and can be changed by using different fresh herbs and savory vegetables, like leeks, or fennel.
1 pint heavy cream
2-3 cloves of fresh garlic, minced or grated
1 tbsp. fresh snipped garlic chives
1/4 tsp. cracked black, red, or yellow pepper or use all three and just add a pinch of each, adding great flavor and color.
2 sprigs fresh rosemary, great for chicken or fish
2 tbsp. fresh basil
2 tbsp. parsley, red chili flakes and cilantro, extra tasty smeared on Carne Asada
(The directions are very simple for this and I had done all the work as far as how long to cook this Garlic Cream.)
Pour the cream into a medium sized saucepan, bring over moderate heat (medium low) add the garlic, herbs, and spices. Allow this mixture to simmer quietly until it reduces and will coat the back of a spoon. After cream has reduced, add the cracked pepper(s). Save a bit of the parsley to add after sauce has cooled.
Set aside after cooking and allow to cool. Spoon into a glass or plastic dish with a lid, seal and refrigerate. Use this creamy, delightful sauce anytime you need a burst of flavor.

2 thick slices of French bread
1 rib eye steak cooked to order, medium rare is suggested
2 tbsp. garlic cream
Cook steak over hot coals or on a BBQ grill to desired doneness. Reserve.
Grill bread on one side only. Place on plate. Spread un-grilled sides of slices of bread with your homemade herbed garlic cream, position tender steak on one slice and top with the other slice of grilled bread.
This sandwich is the best thing north, south, east, or west of the Mississippi! Try this next time you want a steak sandwich; you will not be disappointed! Whichever way you use the Garlic Cream you will say, “Diffrence de La de Viva!”
