How to Make Chicken Salad Chicken Salad Recipe Delicious Dinner Salads Chicken

Salads are extremely versatile and range widely in their ingredients, nutritional value and caloric content. What they often share in common, though, is that they taste fresh and light, and make great entrees or side dishes.

Salads are fun to assemble, and provide a great dish to take to potluck gatherings. They can often be prepared in advance, which is convenient.

Here are a few of my favorite salad recipes. They are relatively quick and easy to prepare, and the results will hopefully please you and your family. Enjoy.

BROCCOLI SALAD

Ingredients
– 1/2 cup of regular or light mayonnaise
– 1 tablespoon of white vinegar
– 1 tablespoon of sugar
– 1/3 cup of chopped red onion
– 12 oz. of fresh broccoli, cut into bite-sized pieces
– 3 slices of precooked bacon, crumbled
– 1/4 teaspoon of black pepper
– 1/4 cup of golden raisins (optional)

In a medium bowl, combine the first three ingredients. Add the remaining ingredients and toss gently to coat. Chill. This recipe is better the next day.

CHICKEN SALAD

Ingredients
– 4 skinless, boneless chicken breasts, boiled and cut into bite-sized pieces
– Two stalks of celery, finely diced
– 1/2 cup of regular or light mayonnaise
– 1/2 lemon, or one tablespoon of lemon juice
– Sea salt to taste
– Pepper to taste

In a medium bowl, combine all ingredients. Add more mayonnaise if desired. Serve chilled over lettuce or in a pita pocket.

TUNA SALAD

Ingredients
– 1 16-oz. can of StarKist Solid White Albacore Tuna in water
– 1/4 cup of regular or light mayonnaise
– 1/4 cup of finely chopped red onions
– 1/4 teaspoon of garlic powder
– 1/4 teaspoon of red pepper flakes

Open and thoroughly drain tuna. Put in a medium bowl and break up into small chunks. Mix in mayonnaise. If the consistency is too dry for your taste, gradually add more. Add other ingredients and mix well.

MIXED GREEN SALAD

Ingredients
– 1 bag of Romaine lettuce
– 2 hard-boiled eggs, chopped
– 2 slices of pre-cooked bacon, crumbled
– 1/2 small red pepper, diced
– 3 Tablespoons of olive oil
– 2 Tablespoons of red wine vinegar
– Salt and pepper to taste

In a large bowl, combine all ingredients, adding the olive oil and red wine vinegar last. Serve immediately.
