Green Tomato Salsa

I have never tried this recipe myself but my grandmother has made this many times and everyone loves it. It’s delicious and amazing. This is something you should try at your next get together. Your guests will love this.


Ingredients needed:

1 onion

3 cloves garlic

8 green tomatoes

2 jalapenos

juice of 1 lime


Preheat the oven to 350 degrees. Place some vegetable oil or olive oil in two baking dishes. Leave on the onion skin, cut in half and put onion in one dish with the cut side down. Leave the peel on the garlic cloves, slice the top off a quarter of an inch. Take some silver foil and place the garlic cloves in it, pour a little vegetable oil or olive oil over them. Then close the foil. Place it in the baking dish. Bake this for an hour, or until the edges of the onion are brown and caramelized. The garlic should be squishy and golden in color. Remove the onions and garlic, let them cool. Bake the jalapenos and tomatoes for twenty minutes, until slightly softened.

Once the onions and garlic are cool enough to handle, peel the skins off of both. Mince the onion into a mushy paste. Chop the tomatoes into small quarter-inch pieces. Remove the stems from the jalapenos, slice them length wise. Remove the gills and most of the seeds. Leaving more seeds will make the salsa hotter. Place all ingredients together and chop or grind until pureed, but still somewhat chunky. Add lime juice and salt to taste.

This will make a very tasty green tomato salsa that you family and friends will love. Serve cool or warm, either way it’s always a great hit. Enjoy and share with everyone. You will want to make this for every gathering.
