This is an excellent ice cream for any occasion. You are sure to impress your guests with its great taste and beautiful green color. Make sure you have at least 30 minutes of time for preparing it, as it requires standing at the stove and stirring. My kids aproved it! Try serving it on a cone dipped in melted white chocolate. The recipe is enough to make a quart of ice cream.
1 cup white chocolate chips
1 cup whole milk
2 cups heavy cream
1 teaspoon vanilla
4 large egg yolks
2/3 cup packed brown sugar
2 tablespoons matcha green tea powder (finely powdered green tea)
1. Combine milk, cream, and vanilla in a sauce pan. Bring to a simmer over low heat, stirring constantly.
2. In a large bowl stir egg yolks. Add matcha powder and brown sugar. Mix well. 3. While stirring, gradually add hot cream and milk mixture to the egg mixture. Mix well and carefully pour it back into the sauce pan. Simmer over low heat, stirring constantly, but do not allow to boil. Boiling will make the sauce turn into curd. 4. When the sauce thickens, take it off the burner and strain it through a sieve or a cheese cloth to remove any lumps. 5. Add the white chocolate. Mix until all the chips melt. You can also melt the chocolate in the microwave, beforehand. 6. Allow the mixture to cool to room temperature and then place in the refrigerator for a couple of hours. 7. If using an ice cream maker, follow the instructions of freezing the ice cream. If you use the freezer, place the ice cream in a large container. Cover tightly and freeze for about 8 hours.
In order to make a lighter version of the ice cream, use 1 and cup whole milk and 1 and cup cream, and replace brown sugar with cup of Splenda. It will not change in taste, but it might take a little longer to simmer it. Good luck and bon appetite.
