Gluten Free Bread Recipes

Gluten free bread does not have be as hard as it sounds; breads made with wheat are quick and simple but many other ingredients can be used in place of this.

The basic bread:

WHITE BREAD

2 cups of oriental white rice flour.
1 cup of gluten-free flour mix.
1 1/2 Tablespoons of clear gel (4 1/2 teaspoons) or clear gelatin.
1/4 cup of sugar.
2 large eggs.
3 1/2 teaspoons of xanthan gum.
1/4 cup of corn oil.
1 cup non-fat of dry milk powder.
1 teaspoon of apple cider vinegar.
1 1/2 cups of warm water as needed.
1 1/2 teaspoons of salt.

Preheat oven to 350 degrees; grease a 9 x 5-inch loaf pan.
Mix all dry ingredients well, including yeast.
Blend eggs into warm water using a fork or whisk.
Pour water/egg mixture into dry ingredients and mix on slowest speed of mixer until flour is moistened.
Add oil and increase speed of mixer, blending all ingredients until you have a smooth creamy batter.
Mix for two minutes.
Add more water for a “creamier” batter if desired.
Pour into loaf pan and allow to rise in warm place to top of pan.
Bake on center rack for 50-60 minutes, till brown.

For a sweet tooth:

SESAME HONEY BREAD

1 Table spoon of gluten-free yeast.
1/2 cup of wild red corn meal.
3 1/4 Cups of Bread Mix.
1/3 Cup of powdered low-fat milk.
2 Tablespoons of toasted sesame seeds.
1 1/2 Teaspoon of soy lecithin.
1/2 sprinkle salt.
1/2 Teaspoon xanthan gum.
1 1/2 cups of warm low-fat milk.
5 Table spoons of melted butter.
1/4 cup of honey.
2 eggs.
1 Teaspoon of cider vinegar.

Preheat the oven at 375 degrees.
Mix all ingredients together in a large mixing bowl.
Beat for 3 minutes until the dough is smooth.
Spread the dough into a 9 inch baking pan, cover with plastic and let dough rise. Bake for 40-50 min or until bread sounds hollow when tapped.


CORN BREAD:

2 Cups of yellow corn meal.
2 Table spoons of potato starch.
2 Tablespoons of white sugar.
1 1/2 Teaspoons of gluten free baking powder.
1 Teaspoon of xanthan gum.
1/2 Teaspoon of baking soda.
1/4 Cup of corn oil.
1 cup of milk.
2 eggs.
A dash of salt.

Preheat oven to 400 degrees.
Grease a baking pan.
Thoroughly mix the dry ingredients.
Beat egg yolks and whites separately.
Blend the egg whites, milk and corn oil into the egg yolks.
Fold the egg mixture into the dry ingredients, mixing just until moistened.
Spread into pan and bake for 20 to 25 minutes.
