When I was growing up my mother and I both loved anything made with peanut butter. Unfortunately, the only thing my father liked made with peanut butter was peanut butter and marshmallow sandwiches. That is, it was the only thing peanut butter he would eat until we got him to try peanut butter fudge.
Peanut Butter Fudge
3 cups sugar
1 cup milk
1/2 teaspoon salt
1/2 jar marshmallow fluff
1 cup peanut butter
1 teaspoon vanilla
1. Lightly butter a 6×9 inch pan.
2. In a saucepan, cook the first three ingredients until they reach the SOFT BALL setting on a candy thermometer.
3. Quickly mix in the remaining ingredients.
4. Pour mixture into pan and let cool.
5. Cut into 12 pieces.
This is a very easy recipe to make, but you need to make sure that you cook it to the right temperature in order for it to set correctly.
