Deep fried pickles? You’re kidding right? The idea sounded terrible and I was a little uncertain about eating them but now I tend to enjoy them. There were only so many things to do with cucumbers and I didn’t want to waste them but I didn’t’ want to have them the same way everyday.
What you will need
3 large cucumbers thinly sliced (pickled cucumbers or dill pickles can be used)
1 c flour
c of water
2 egg yolks
2TBSP Cajun seasoning
Olive oil or vegetable oil
To prepare you start by whisking the yolks and the water together. Add the flour and Cajun seasoning slowly. Coat a few pickles at a time by pouring the mix in a bag and adding them. Shake the mix to ensure they are well coated.
Heat the oil and place the pickles into it. Fry until golden brown and remove from oil. Place in a strainer with paper towels to remove the excess grease from the cucumber fries.
