I do not know where it isoriginated from but when it comes to my kitchen it is modified my way. I never follow the recipe. If I can see how the dish is made and looks then I make it my way. I add the ingrediants I like according to my taste. Now a days I have become fan this chickpea salad I make. It is so healthy, full of protein and vegetable. I usually make it for lunch but when I make it I make a big portion so I can eat leftover for dinner or next day. It goes well with all kinds of meal like American, Italian, Asian, Indian any . Here is what you need:
1) 1 can of chickpeas.
2) 1 red/orange bell pepper.
3) 2 medium carrots.
4) 1/2 cucumber.
5) 2 celery sticks.
6) 1 Avocado.
7) Few cherry tomatoes ( or any you find in deal that day)
8) Few leaves of cilantro.
Here is what you need for dressing: 2 cloves of garlic, 1tsp of extra virgin olive oil, 1/2 lime, salt and pepper.
Now, cut the garlic in very small piece. Put it in a small bowl add EVOO , lime juice and salt and pepper according to taste and leave it. I make the dressing first because i want the garlic to be well mixed with other mixture.
Then basically cut all the vegetables I listed above in small piece (almost the size of chick peas) and put it in a large bowl. Open a can of chickpeas and rinse it in running water. Then add it with the other vegetables. Now add the salad dressing that you made. Then mix all the vegetables together and it’s ready to eat.
It is good in so many ways. It is good if you are dieting because it is very less in calorie, it is good if you are diabetic because it is very low in carb and it is also good if you have cholesterol problem because it has no cholesterol but avocado.It is such a easy recipe and healthy and tasty as well. My whole family loves it .
