If you’re like most people, your days tend to be hectic and filled to the brim with activities. With getting the kids out the door to school and a full day at the office, sometimes the last thing you want to think about is getting dinner on the table. Yet, there is nothing like a light and satisfying home-cooked meal that you and your family will enjoy.

To deal with this issue, keep some quick and easy healthy recipes on file, and find a few staples that your family really enjoys. To help you get started or to add to your recipe collection, below are two recipes for quick and healthy dinners.

* Chicken for two with steamed broccoli

You’ll need:

Two skinless, boneless chicken breasts

1/2 cup of Italian bread crumbs

Two egg whites

2 cups of fresh broccoli

1 tablespoon of light butter or margarine

1/2 tablespoon of lemon juice

Preheat your oven to 350 degrees. Separate the egg whites in a small bowl or container and set aside.

Place the bread crumbs in another bowl or container and set aside.

One at a time, take a chicken breast and dip each side in the egg whites. Then dip each side of in the bread crumbs. Place in an olive-oil sprayed baking dish and bake for 25 minutes.

While the chicken is baking, rinse the broccoli and place in a steamer basket. Steam for five to eight minutes. When done, remove and place in a bowl.

Combine light butter and lemon juice in a small dish and heat in the microwave for 15 seconds. Then pour over the broccoli.

Serve the chicken and broccoli on a dish, with perhaps a dinner roll to complete the meal.

* Breakfast at night – fancy scrambled eggs

For two servings, you’ll need:

3 eggs

1/3 cup of Egg Beaters (egg substitute)

1/2 cup of shredded cheddar cheese

1/4 cup of deli ham, finely diced

1 green onion, chopped

Salt and pepper to taste

1 tablespoon of olive oil

1 small cantaloupe, chopped

In a large bowl, beat eggs and Egg Beaters. Add the remaining ingredients and stir well. Preheat a large skillet on the stove on medium heat. Coat with one tablespoon of olive oil. Pour in egg mix and let heat for several minute, stirring occasionally, until eggs are solid. Serve with fruit.
