Carrot Cake

Fast and easy cakes. I think we all like nothing better than that. We are all busy and sometimes stressed. After a long day or week we would love to give ourselves a treat. But, face it, we don’t want to fuss. Just look like we did. Vanilla, chocolate or something in between is what we are hungering for. Well here is a treat or you. Fast and easy and good for you too. Serve it warm with cold milk. serve it cold alone. Any way you choose to serve it will be special. Try it for a family gathering or a party. You won’t be disappointed. The carrots in the cake make it good for you. My kids were slightly suspicious but the fact it was cake and had frosting …they were willing to have seconds. My kids were hard to fool and very picky but this cake was a real treat for them that they enjoyed.

Carrot Spice Cake

Ingredients:

I box your choice spice cake mix ( oil, eggs and water or milk according to the package directions)

1 & 1/2 grated carrots ( * tip have used cooked or pureed to fool my kids so that there were no visible carrots*)

1 package instant vanilla pudding

1 can cream cheese frosting ( any brand)

1. Make spice cake according to the package directions > Add the dry vanilla pudding mixing well. Blend in carrots. Stir slightly to just blend in. Pour into a greased 13 by 9 by 2 inch baking pan. Bake at 350 degrees for 40 minutes or until toothpick inserted in center comes out clean. Do not over bake. Cool completely. Open frosting and frost cake. Eat and enjoy!

You can freeze cake for 1 month before frosting. It keeps well but not longer than that. Cover tightly after frosting and eat within 5 days.
