Cajun Tiger Omelet

This is one of the greatest omelets I have tried. My aunt is from Louisiana, originally, and has made this for me many times. I, among many of my peers love this recipe. Family, friends, and children all enjoy this delicious breakfast. Try this on your relatives or close friends. Have them all over for a nice big breakfast.


Cajun Tiger Omelet

1/2 lb. or 1 link fresh Cajun green onion sausage, or whatever you can get

8 eggs

2-3 tbs. milk

1/2 onion chopped

1/2 bell pepper chopped

1/2 fresh diced tomato

1/2 cup green onions chopped

1 can of small sliced button mushrooms

1 chopped jalapeno

pinch of salt

pinch of cayenne pepper

Mix the eggs, milk, and seasoning in a small mixing bowl. On medium to low fire fry the sausage until done then break it into smaller pieces; and remove. In a small amount of butter, add onion, bell pepper, tomato, and jalapeno then cook until wilted. Proceed to add sausage and green onion and cook an additional few minutes.

Whip eggs, milk, and seasoning once more then add to the pan. Put the fire on low. cover it and cook until eggs are done. You can cook it like it is or stir it around some. This part is your choice.

Once your omelet is finished, remove from the skillet and let cool a few minutes before serving. This dish may burn if eaten to hot. Grab a glass of milk to enjoy will your breakfast, sit back and relax. Enjoy! I know we do every time this omelet is cooked, it is simply amazing. Try this dish and taste the delightful spices and goodness of it. You will not regret it, nor will anybody else you feed this to. As long as they like spicy foods, that is.
