This recipe is frying short rice noodles or Lao Shu Fen(老鼠粉). The 'rat noodles' (as literally translated from its Chinese name due to the noodle shape as being short and tapered like the rodent's tail) can be fried or cooked in soup. In some countries, the noodles are known as silver needle noodles (银针粉).
Ingredients
1 kg/2.2lb short rice noodles (老鼠粉)
150g/5oz chicken meat
50g/2oz dried shrimps
4 pieces dried Chinese mushrooms
300g/10oz bean sprouts
1 medium-sized carrot
4 stalks spring onions (scallions)
4 cloves garlic (minced)
About 1.5cm (0.6in) ginger (lightly mashed)
Seasoning ingredients:
1 tsp salt
1 tsp sugar
2 tsp soy sauce
½ tsp white pepper
1 tsp black soy sauce
2 cups/Chinese bowls water
Garnishing ingredients (optional)

Garlic and the seasoning sauce.
Heat up Chinese wok or any reasonably deep pan or pot. Put in 3 Tbsp of cooking oil and fry garlic. When the garlic is aromatic but not brown, add in the marinated shredded chicken and stir-fry for 2 minutes or till cooked.
Push chicken to the side of the wok (or dish out) and fry dried shrimps till well-fried and fragrant. Push fried shrimps to the side and put in the mushrooms to fry till aromatic. Then add in the carrot and stir-fry for a while.
Add in the rice noodles and pour the seasoning sauce over. Let cook for several minutes till noodles absorb the sauce and soften a little, degree of softness depending on individual preference. If adding more water, remember to check for taste – whether more salt, sugar, etc. is needed.
Put in the bean sprouts and mix well.
Lastly, add in the spring onion and the fried noodles is ready when mixed thoroughly.
The noodles dished out into a bowl and ready to be ‘chomped down’ by a ‘rat noodle’ fan!
